There are many common threads within the cooking of
Tapas, from selecting the best Spanish Arroz (rice)
to picking the finest produce, the flavour of prime
local ingredients need little disguise just a few
herbs plus good for you olive oil and this is
proudly reflected in the cooking, some dishes have
achieved national status such as Paella, Tortilla,
Patatas Bravas etc�
But it�s not just the ingredients such as garlic,
herbs, olive oil and vinegars, it�s an infusion of
these and other ingredients, and how and when they
are put together that creates the unforgettable
taste of each individual Tapa.
